Healthy, delicious and crispy Southern Bliss Apples from R&R Smith together with toasted walnuts give this classic Waldorf Salad a fresh Tassie touch.

Chef Kirsten Bacon has created a creamy, easy recipe that is perfect for lunch, picnics, barbecues – or a quick and simple dinner side dish that pairs perfectly with Roast Chicken, Pork or Stuffed Mushrooms.

Directions

  1. Make the dressing: In a medium bowl, whisk together the mayonnaise (or yogurt), lemon juice, salt, and pepper until smooth.

  2. Prepare the salad: Core and chop up the Southern Bliss Apples leaving the skin on. Combine with celery, grapes or cranberries, and toasted walnuts in a bowl. Gently toss until everything is well coated in the dressing.

  3. Serve: Arrange fresh lettuce leaves on a serving platter or individual plates and spoon over the Waldorf salad and serve immediately.

  • Tips and Tricks
If using yogurt instead of mayonnaise, you can add a drizzle of good leatherwood honey to balance the tartness. Toasting the walnuts adds extra crunch and flavour. Fridge: Store in an airtight container for up to 4 days.
