Tom’s Sourdough Pork Meatballs

It’s ironic that one of the most wasted parts of a loaf of bread is also one of the most delicious—save those crusts, odd ends, lone slices and make meatballs.

Directions

  1. Preheat oven to 180°C and line a baking tray with paper.

  2. Grate two apples and add to a bowl along with the pork mince, torn bread, dried herbs, and egg. Season with a pinch of salt.

  3. Combine the mixture well with your hands, then roll into meatballs.

  4. Bake meatballs in the oven for 30 minutes, turning halfway through cooking, or until cooked through.

    Alternatively you could pan-fry the meatballs. Heat a frying pan over medium heat. Add some oil, let it heat up, then add the meatballs. Cook until golden on all sides (approx. 2 min. on each side) and cooked through (approx. 15 min. total) using tongs to turn them all around.

  5. There are a million ways to eat meatballs. You can eat them with pasta. You can eat them with soup. You can eat them stuffed into sandwiches, or as they are.
