Preheat oven to 180°C. Grease and line a 20cm springform cake pan with baking paper

Take the grated zucchini and place in a clean cloth and squeeze tightly allowing the liquid to run out. Discard liquid.

In a medium sized bowl, combine all ingredients and mix well. The mixture should be firm like a cake batter.

Pour the batter into your prepared baking tin.

Bake for 45-50 minutes or until golden and set in the middle.
