Crispy Corn Fritters

These corn fritters are tasty and simple, and will leave everyone at the dinner table full and satisfied.

Directions

  1. Pre-heat your oven to 180°C.

  2. Place grated zucchini in a colander set over a bowl and stir through 1 tsp salt. Set aside for 15 minutes, then squeeze to remove excess liquid.

  3. In a large bowl, whisk eggs, flour, herbs to combine. Add to the mixture the grated zucchini and grated halloumi.

  4. In batches, spoon 1/4 cup zucchini mixture onto a lined baking tray, making medium sized burger or fritter shapes. Flatten slightly with a spatula. Place tray in the oven and cook for 10–15 mins, or until golden and crispy. You can also fry the fritters in olive oil, in a large frypan over medium heat for 5 – 7 mins (flipping hallway).

  5. Serve fritters warm with a fresh seasonal salad, dollop of aioli and enjoy!

    Serve with a spoonful of Greek yoghurt, fresh mint or dill.

    Cooked fritters can be stored in the freezer for up to three months—simply re-heat in the oven as needed (for school lunches, or a quick and easy dinner).
