Combine ingredients in saucepan and cook gently until peppers are soft, allow the liquid to reduce somewhat.

Blend with a stick blender, or an upright bar blender.
To serve, add the paste to salad dressings, marinate meats and veg in the paste. Add to stir-fries and curries. Use you as you please.

Store in an airtight container in the fridge for 2 – 3 weeks. Or freeze portions in an ice cube tray and use as needed to preserve the paste for 2 – 3 months.
