Chilli Paste

Want to give your dish a kick? Put together your own homemade chilli paste, and use it to your heart’s desire. Rocoto peppers can be notoriously spicy, so watch the seeds.

Directions

  1. Combine ingredients in saucepan and cook gently until peppers are soft, allow the liquid to reduce somewhat.

  2. Blend with a stick blender, or an upright bar blender.

    To serve, add the paste to salad dressings, marinate meats and veg in the paste. Add to stir-fries and curries. Use you as you please.

  3. Store in an airtight container in the fridge for 2 – 3 weeks. Or freeze portions in an ice cube tray and use as needed to preserve the paste for 2 – 3 months.
