Heat grill to medium-high.

In a large bowl, toss all the ingredients together and thread onto skewers.

Turn occasionally, until the chicken is cooked through (approx. 8 – 10 minutes).

Using two parallel skewers helps keep wide pieces of food secure as you turn.

Serve with mint yoghurt sauce.

Pre-soak your bamboo or wooden skewers in water for 15 minutes before using. This will stop them from burning on the BBQ.
