Combine ingredients and cook until reduced to under half. Keep stirring to stop sticking. This will take some time, go gently as it can stick to the pan and burn – this isn’t too bad though, as it will just change the depth of flavour.

Blend the entire amount and push through a sieve. Will keep in the fridge for 2-3 weeks, or freeze for 6 months.
