A premium product growing from strength to strength.
Inspired by conversations with local chefs about white asparagus – Tasmanian White Asparagus has been over ten years in the making. Prioritising seasonality, and sustainable growth conditions, farmer Richard Weston and his business partner, Tom Barham are growing varieties of European white asparagus. Compared to green asparagus, its white counterpart is touted as being distinctly sweeter, and with an earthy flavour.
As a premium product found more readily in Europe, the duo are passionate about bringing this premium product to chefs around Tasmania, but also Australia more widely. Grown in Brighton in Southern Tasmania, the soil is fertile with a perfect microclimate for white asparagus. Sandy loam is on hand, with good drainage in the soil and conditions similar to Europe.
