Sustainability and a care for animals is important for La Cantara, with owners Genaro and Rosselyn Velasquez having a background as veterinarians in Venezuala. Arriving in Aurstralia in 2009, the couple found a passion for dairy farming, and a love for cheesemaking.
La Cantara uses 100% Tasmanian milk in their artisan cheeses. La Cantara’s farm and factory is located in Smithton, Tasmania. Best farming practices are important, and it is possible to visit the farm to experience the full cycle of the operation from a designated ample viewing area. The farm operates on two main calving season during Spring and Autumn, guaranteeing continuous milk flow throughout the year.
